DSCF3706 smallAuthentic sour cream without any dairy. A firm favourite at any table and hit with little people.  Simply delicious served with vegetables, leafy greens, inside tortilla wraps or with a curry. I use silken tofu or regular tofu combined with water to achieve a creamy consistency.

Ingredients:
Half pack silken tofu (or regular tofu combined with a little water)
5 tbls sunflower oil
2 tbls lemon juice
2 spring onions or handful chives
1-2 tblsp ume vinegar
¼ tsp salt

Preparation:
Blend all the ingredients in a small food processor.  Adjust flavours to taste.  Enjoy!
