These puffed rice treats are a hit with everyone!

They are sweetened using rice syrup which is a lovely and healthier alternative to sugar.  Rice syrup is made from the whole rice grain and so bestows stable and steady blood sugar levels.

Ingredients:
3 dessertspoons Peanut butter
3 dessertspoons Rice syrup
Dash of Vanilla essence
Handful Raisons
Chopped nuts – Almonds/ pecans/ cashews
2 cups Puffed Rice

Preparation:
Combine the peanut butter, syrup, raisons and vanilla in a pan and stir until the butter is melted. Add the nuts and puffed rice and stir quickly while with peanut butter mixture is soft . Spoon out into paper cup cakes as individual servings or keep as whole. Let cool to firm and set and then enjoy!
