My much loved, succulent dessert bursting with natural sweetness.
Base
1½ cups oats
½ cup ground almonds
Very small pinch salt
half cup sunflower oil
3 tblspns rice syrup
Make oat flour using a hand held blender or food processor to blend the oat flakes. Mix the dry ingredients together, then mix the wet ingredients together. Now combine the wet and dry ingredients together and with wet fingers, knead a little. Place in an oiled baking dish and bake in oven for 10-15 minutes until top goes a little golden.
Filling
1 cup pecans, roasted
1 cup amazake
3 tblspns rice syrup
2 tblspns sunflower oil
2 tblspns agar flakes
½ tspn vanilla extract
Arrow root
Combine the filling ingredients in a pan (except for the pecans) and whisk together. Bring to a boil and simmer for 5 minutes until the agar has dissolved. Pour the filling into the pie shell. Arrange the halved pecans on top of the filling. Bake for another 10 minutes.
