Sample my easy peasy cous cous cake recipe and enjoy biting into a sweet treat, free from baked flour, dairy and sugar.  A hit at our recent classes.


1 cup wholemeal cous cous
3 cups apple juice
handful raisons
1 apple finely cut
Handful toasted hazelnuts
1 tblspn sugar free jam (I like St Dalfour’s raspberry and orange varieties!)
small pinch sea salt


Bring the apple juice to a boil with the raisons and small pinch sea salt.  Add the cous cous and apple and  simmer for 20 minutes, stirring every few minutes.  Add the nuts.  Spoon into mould and allow to cool and set.   Turn out onto a serving plate.  Combine jam with half tblsp water and decorate top.  Enjoy!
