Our easy, effective and fresh kebab recipe.  We used a combination of medium firm tofu and smoked tofu here and served the dish with a natural barbeque style sauce.  Enjoy!

2 red onions cut into wedges
2 lemons cut into wedges
Tofu cut into cubes
Sea salt
Olive oil
Wooden skewers

Prepare the skewers with onion, lemon, tofu and mushroom and repeat to fill the length of the skewer.  Brush each kebab with olive oil and season with salt.  Put the kebabs in a medium/hot heated grill and rotate regularly, brushing with more oil and cook until the onions are tender, about 12 minutes.

Serve with Sauce for Kebabs:

4 carrots
2 stalks celery
1 onion
1 tsp apple juice concentrate
1 tsp mustard
Half tsp oregano
Half tsp cumin
1 tbslp shoyu
1 tbsp sesame oil

Pressure cook carrots, celery and onion for 12 minutes.  Blend to a smooth consistency.
Transfer half the mixture to a dish and combine with the other ingredients.
Keep the other half of the carrot mixture and serve this variety too.
