Here is the recipe for the cookies that everyone so enjoyed at ‘A Recipe For Energised Eating’ at Wellbeing in the City last week.
Oat, Raisin & Almond Cookies
1 cup oats
tiny pinch Sea salt
Half cup ground almonds
Handful raisins
Quarter cup flour
Quarter cup sunflower oil
4 tablespoons rice syrup
Handful flaked almonds
Sugar free jam – optional
Dry roast the oats in a pan for a few minutes. Add a tiny pinch sea salt, almond essence and raisins. Add a third cup boiling water and stir. Now add the flour. Combine the oil and rice syrup and add to the mixture. Add the almond flakes. Prepare an oiled cooking tray and heat the oven to 180 degrees celsius. Ease spoonfuls of the mixture onto the cookie tray. Make a dent in the top of each cookie using your thumb print and top with sugar free jam. Bake in the oven for 12-15 minutes until the cookies begin to go golden. Enjoy!

hi again, found the temp! have tried them so yummy, thanks. I used both almond essence as well as ground almonds to the mixture and adding apricot sugar free jam to the top. x
